Flourless Apple Pancakes – Liora Bels

Serves 2 persons.

Indulgent No-Flour Apple Pancakes

2 large apples – preferably Boskoops
organic coconut oil, for frying, cold-pressed


Peel and carefully remove the core from the apples with a sharp knife or apple corer. Cut horizontally into 4 – 5 thick slices.

Heat coconut oil in a wide cast pan. Place apple slices in the pan and fry them on high heat until lightly browned on both sides. Cover the apples with a lid and bake for about 3 minutes on medium heat until they are soft and juicy. 

Remove from pan and repeat with remaining apple slices.

Stack apple slices on top of each other

Serve with Cinnamon Caramelized Walnut Maple Syrup


Cinnamon Caramelized Walnut Maple Syrup

3 tablespoons maple syrup

1 tablespoon cinnamon powder

a pinch of cardamom

handful walnuts


Mix together all ingredients.
Warm a pan over medium heat. Add mixture and fry for a few minutes until walnuts are caramelized.


Notes:
You can substitute walnuts for pecans
