Kurkuma – Cinnamon Roasted Root Veggies


Choose a good variety of the following organic root vegetables for the best taste:

Parsnips, peeled and shopped into quarters

Carrot, peeled and cut in halves

Turnips

Beets, peeled and shopped into quarters

Rutabagas, peeled and shopped into quarters

Yuca Roots, peeled and shopped into quarters

Parsley Root

Celery Root

Dried pitted organic plums

Fresh thyme

2 large tablespoons of melted Coconut oil organic, cold pressed

1-2 teaspoons turmeric

1-2 teaspoons cinnamon

Pinch of black pepper

Salt to your liking (Maldon or Pink Himalaya Salt)


To make the roasted veggies:

Preheat the oven to 180 degrees C. Prepare root vegetables, place them with dried plums into a baking tray, drizzle with coconut oil and mix everything with turmeric, cinnamon, salt, a pinch of black pepper and fresh thyme. Stir well and roast for 30 minutes or until soft and juicy. Then change to grill for another 10 minutes and increase to 200 degrees. Stir once in while.
