Cooking for Kids: Mini Pumpkin Bread

Makes 4 small breads


Mini Pumpkin Bread

200ml fresh almond milk, unsweetened

200g Hokkaido pumpkin, chopped

120g buckwheat flour

1 tablespoon coconut oil, cold pressed, organic + more for braising

1 teaspoon cinnamon

pinch of vanilla

1/2 teaspoon baking soda

50g rolled oats

30g coconut flakes


To make the bread:

Preheat the oven to 180’. Braise pumpkin in coconut oil for about 3-5 minutes, stir well. Blend all ingredients together, except oats and coconut flakes, in your high-speed blender, in the order listed. I use Vitamix to achieve the best texture. Turn the dial to 1 and slowly increase speed to 10. If needed use the tamper to push the ingredients into the blades. Blend for 20 seconds. Add oats and coconut flakes and blend for another 5 seconds. Do not overmix. Grease a mini bread or muffin tin with coconut oil or line it with baking paper. Fill each section 3/4 full with the batter. Bake for 30 minutes. Let them cool.


Notes:

* You can substitute pumpkin with sweet potato.

* This recipe is made with Vitamix S30. You might need to adjust measurements if you use a different high-speed-blender.

Pumpkin: is a great source of fibre, that supports your digestion and helps you keep fuller longer. It is wonderfully rich in beta-carotene, which is converted to vitamin A in the body. It aids vision and protects your skin. It also contains a good amount of vitamin C. Both vitamin A and C are antioxidants that help boost your immune system and protect your cells.

Buckwheat: is a gluten free pseudo grain. It is power food, that is energizing and very nourishing. It is a seed that contains all eight essential amino acids (i.e. those our body is unable to produce naturally) that are important for immune strength and muscle development.  It is high in protein and fiber and a good source of B vitamins. Further it contains a high concentration of minerals like magnesium and copper. Copper is important for the production of red blood cells and magnesium has a relaxing effect and supports strong bones and teeth. Both fiber and magnesium improve digestion.

Cinnamon: is a flavorful spice that has antimicrobial properties, great antioxidant potency and helps reduce blood sugar levels. It has a warming and soothing effect and its scent is a gift for the soul.
