Cashew Basil Parsley Dip

Cashew Basil Parsley Dip

juice of 1 fresh lemon, organic

6-8 cherry tomatoes, organic

120g raw cashews, organic, soaked in purified water for 2-4 hours, rinsed thoroughly

20g fresh basil leaves, organic

20g fresh parsley, organic

sea salt, to your liking ( I love Maldon Salt)

pinch of cayenne

fresh chili (optional)


Notes:
You can substitute cashews for other nuts and seeds, please keep the soaking time in mind accordingly. Soaking nuts and seeds will maximize the nutritional value and make them easier to digest. Remember to rinse them thoroughly before blending. 

By adding more water the dip becomes a delicious dressing – you may need to add salt, lemon and cayenne for the flavor.


To make the dip:

Blend all ingredients together in your high-speed blender in the order listed. I use my Vitamix to achieve the most creamy, aromatic texture. Turn the dial to 1 and slowly increase speed to 10. Use the tamper to push the ingredients into the blades. Blend for 30 seconds or longer until desired consistency is reached.
