Fresh Figs with Macadamia Vanilla Delight
200ml filtered water
4 Tablespoons maple syrup, organic
1 Teaspoon maca root
1/2 Teaspoon lemon zest, organic
juice of half a lemon, organic
1 vanilla bean, organic
To make it:
Soak macadamia in filtered water for approximately 7 hours and wash thoroughly. Using the Vitamix preferably or a high-speed blender, pour 200ml of water with the macadamias into the blender. Select Variable 1 and slowly increase speed to Variable 8 for 30 seconds. Add maple syrup, maca, lemon zest and lemon juice. Blend again by slowly increasing speed to Variable 9 for 40 seconds. Prep the Vanilla Bean by splitting the pod lengthwise into two halves. Scrape the pod halves and add the seeds to your mixture. Blend on Variable 3 for 40 seconds. Cut or open figs with yours fingers into quarters and serve with mixture.

Feel free to add 1 Tablespoon of maca for a stronger taste. Also the cream is best when chilled for approximately 3 hours in the fridge. You may also enjoy it with seasonal fruit – e.g. summer berries. It can be stored in a jar in the fridge for one more day.
